French text En tour la feste sainct Martin Ienin fist tuer son porceau & le fouailler au fin matin De paille ardante a groz morceau Sa femme apres dans son grand ceau Les trippes mist elle un loing Disant pour le friant morceau Iauray landouille et vous le groing.

French text  modernised En tour la fête Saint Martin, Jenin fit tuer son porceau; Et le fouailler, au fin matin, De paille ardente à gros morceaux. Sa femme après dans son grand seau Les tripes mit. Elle va loin, Disant: "Pour le friand morceau J'aurai l'andouille et vous le groin".

English translation So when St Martin's Day comes round, Jenin has his pig slaughtered; And, at the morning's end, sears it With smouldering straw, in large gobbetts. After this, his wife puts the tripe In her large pail. Then she walks away, Saying: "For the choice bit I'll have the chitterlings and you'll have the snout". (trans Timmi O'Danaos & Donna Ferrentes)
